Friends, I am searching for a new cookbook.. Something long on vegetables, low fatish.
Our two go to books include the Cooking Light Series and most importantly, The Best Vegetable Recipes by the editors of Cook's Illustrated.
I would appreciate your suggestions.

Patricia Wells has a vegetable book out -- I don't have it but have others by her and I like her recipes. You might want to give it a peek next time you're at Borders or B and N.

The Moosewood cookbooks are all good, too. I have not used Paul Gaylor's cookbooks, but word has it they're worth having.

I *highly* recommend Ellie Krieger's "The Food You Crave". It is healthy but delicious, not a ton of weird ingredients required, and we have loved every recipe we've tried so far. Enjoy!
